Cupping notes
Kainantu sits high in the Eastern Highlands, where coffee grows in small gardens beside sweet potato and banana, a few hundred trees to a family. Cherries are pulped and fermented overnight, washed, then dried on raised beds before they travel down the Highlands Highway to the coast. We roast this lot to a medium, just past the first crack and well short of the second. In the cup it is raw sugar and red apple first, then cocoa nib as it cools, with a soft, round body and a clean finish. Rest it a week after the roast date. For filter, 15 g to 250 ml at 94 °C; for espresso, 18 g in and 40 g out in about 28 seconds. It takes milk well.
